Lemon Rice Aka Chitra Annam

Ingredients

  • Rice  – 3 cups( Cooked)
  • Lemon – 1/2 medium size
  • Dry Red Chillies/ Green Chillies  – 2 ( Break in 4 pieces each)
  • Ginger – ¼ spoon ( Grated)
  • Curry leaves – 5
  • Asafoetida / Hing – 1/4 tsp
  • Channa dal – 1 tsp
  • Mustard Seeds – ½ tsp
  • Turmeric powder – ½ tsp
  • Oil – 2 tbsp
  • Salt – to taste

How I Do it

Heat  oil in a Wok.  Add hing, Mustard seeds, Channa dal, Curry leaves, Ginger and the Chilles ( green or Red). Saute in low heat for 1 minute. Add Turmeric Powder , salt and rice. Mix well lightly. After about half a minute add the Lemon  and remove from heat. Mix thoroughly so that lemon covers the rice.

Serve Hot with Pappad / Crispy Potato fry / Potato Crispies.

Special Instructions :

Lemon rice is easy to cook meal with left over rice.

Do not keep over heat once lemon is added, the rice might tend to become bitter.

Add turmeric just before the Rice or it will burn
