Home Made Gulab Jamun

Ingredients ( Jamun) :

Mava/Khoya ( Dry reduced milk) – 1 ½ Cup ( Unsweetened )

Maida – ½ Cup

Saffron – pinch soaked in 2 tbsp Milk

Carmamom – pinch

Oil – for deep fry

Ingredients ( Sugar Syrup) :

Sugar – 1cup

Water – 1 cup

Carmamom – pinch

Milk – 1 tsp

How I do it :

For the Sugar Syrup, heat Sugar, water  till sugar dissolves in it. Add the cardamom and milk to it.

Because of the milk the impurities from the syrup will float on top as froth. Remove it with a spoon

To make the Jamun’s, mix Khoya, maida , cardamom, saffron milk. Knead well with water.

Leave it for 15 minutes.

Roll into small balls, I made them half of ¾ gooseberry size.

Heat oil. Add the balls in batches of not more than 6. Cook in low heat until it turns to dark brown color.

Remove and drop them in the sugar syrup for 15-20 minutes.If you like you Jamun with the Syrup leave them there or remove from the syrup and store them separately. Garnish with finely chopped Pista/ almond.

Special Instructions :

Add little red color dough , it will give a nice color inside the Jamun.

Mava/ Khoya Preparation : Heat Milk in low heat, Keep stirring until it becomes solid. This is a long procedure and requires a lot of patience. Alternatively , you can also purchase from local stores.

If you plan to buy Khoya , please do not use sweetened one, as this will be extremely sweet and make the Jamun soggy in a while.
