- Suran/Yam/ Karanai Kizhangu – 250 gms
- Tamarind – 2 seed length
- Sambar Masala – 1 tbsp
- Jeera Powder – ½ tsp
- Coriander powder – 1 tsp
- Turmeric Powder – ½ tsp
- Mustard Seeds – ½ tsp
- Udad dal – 1 tsp
- Curry leaves – 7-8
- Red Chilli Powder – ¼ Tsp ( Optional)
- Asafoetida/ Hing – ¼ tsp
- Salt – to taste
- Oil – 2 tbsp
How I do it :
Chop the Yam into the desired shape ( For the diamond shape I made here you can cut in length first and then diagonally )
Heat a shallow pan and pour 2 cups of water. When it boils add the Sambhar masala, tamarind, ¼ tsp salt and Chopped Yam. Allow it to cook till its ¾ th done. Check with a fork. The time to cook depends on the quality of Yam. The new Yam takes a shorter time.
Drain the water and allow to cool.
Heat oil . Add Mustard seeds, Udad dal , Hing and Curry leaves. Add the chopped Yam, Cumin and Coriander powder and little salt. Sambhar masala already has spice but if you want it spicier add ¼ tsp Red Chilli Powder.
Stir lightly until the masala mixes with the Yam properly. Now let it cook in low heat for 15 min or until it becomes crispier. During the time, do keep stirring occasionally so that the yam becomes crispy from all sides.
Remove from fire and serve hot with Rice & Sambhar/ Dal. Its also a preferred side dish for Curd Rice.
Special Instructions :
Remove Yam from the water when its done 3/4th or it will over cook and loose its shape
Sambar masala can be replaced with – 1/2 tsp Cumin Powder+ 1tsp Coriander Powder+1/4 tsp Hing+ pinch of Fenugreek Powder
