- Basmati rice – 3/4 cup
- Milk – 2 litre
- Sugar – 1 cup
- Cardamom Powder – 1 tsp
- Almonds / Cashewnuts– 10
- Dry Fruits – 1 tsp
How I do it :
Wash and add rice to 2 cups water , 1 cup milk and Cardamom powder.
Place it in cooker until 1 whistle and then lower the heat and cook for 5 minutes.
Remove from cooker and Lightly mash it with a spoon. Do not apply pressure or it becomes mushy.
Meanwhile, heat the remaining Milk and keep stirring it in low heat until it reduces to half the quantity.
Add the cooked rice and keep stirring for 10 min.
Remove from heat, allow to cool . Garnish with chopped dry fruits.
Special Information :
Rice will soak milk while cooling, so keep the consistency more liquid than you need.
Saute the Cashew before adding to the Kheer before serving.
