- Dosa /Idli Batter – 1 cups
- Chicken – ¼ cup
- Cheese – ½ cup
- Dry herbs ( Pizza seasoning) – ½ tsp
- Black Pepper powder – ¼ tsp
Pre preparation :
Use left over chicken from gravy or fries.
Alternatively, Chop Chicken into small pieces.Stir fry chicken with a pinch of basic masala’s like Cumin powder, coriander powder, Garam masala, salt and Red chilli powder.
Cook till done and allow to cool to room temperature.
How I do it :
Heat Dosa pan.
Grease with oil.
Add a ladel of batter and spread in circle shape.
Keep the heat low.
Also avoid making it very thin , as the Chicken shreds will not stick to the batter.
Now , place few chicken shreds evenly all over ( this is absolutely your choice to control the quantity )
With a wooden/ Steel spatula, press the chicken shreds gently so that they are placed well in the Dosa. This will hold them firmly when done.
Now sprinkle shredded cheese /grated cheese. I use mozzarella, however you any use other varieties as well.
Sprinkle the black pepper powder and Dry herbs.
Cover with a lid, this will hasten the melting of cheese.
Once the cheese has melted, remove with Dosa Spatula and Serve hot.
Special Instructions :
Dosa as such does not take more than 3-5 minutes.So once you poured the batter, place the chicken immediately.
However, add cheese only when you see that the raw batter has cooked. If you add cheese before that, the dosa will not cook from inside and can becomes mushy !
Ensure the heat is low.
