- Sugar – 1 Cup
- Water – 2 Cups
- Maida/ All Purpose flour – 1 cup
- Curd – 5 tbsp
- Baking Soda – 1/2 tsp
- Cooking soda – 1 pinch
- Color – 1-2 pinch
- Water – for making the batter
How I do it :
Heat Water and sugar ,stirring continuously. When sugar melts, Add a thin slice of lemon. Keep it in low flame for 5 min till the sugar melts. Add color and remove from heat.
Now mix All purpose flour, curd, Baking Powder,Baking Soda . Add little water if required to bring to a thick consistency. Leave it for 10 min.
Now pour the batter in a cone squeeze bottle / or thick plastic cover which has been cut in one corner to allow the batter to flow out.
Heat oil. Squeeze the cone into the oil in round shapes. Allow it to cook for a few minutes in low flame. Turn the other side and cook equally.
Remove from Oil and place in the Sugar syrup for 5 seconds. Ensure the syrup is coated from all sides. Remove and Serve hot with Rabri/ Curd.
Special Instructions :
Do not keep the batter standing for long as the baking soda will lose its impact.
You can alternatively add color to the batter instead of batter.
While making the jalebi in the oil , make sure oil is hot enough or the jalebi will be flat.
