Ingredients :
For Bottom Layer :
- Milk – 3 cups
- Rava/ Sooji – 1 cup
- Rose water/ Cardamom powder – 1 tsp
For the Top Layer :
- Milk – 1 cup
- Cornflour – 2 tbsp
- Paneer – 50 gms
- Chilled milk – 3 tbsp
- Sugar – 3 tbsp
- Cardamom Powder – 1tsp
Sugar Syrup :
- Sugar – 1cup
- Water – ½ cup
For Garnish :
Chopped Pista/ Almonds
How I do it :
Bottom Layer :
Heat Milk in a wok ( non stick preferably). Add Rava ( do not roast it) and keep stirring on high flame.
When the mix thickens, add sugar and cook for 1 minute more on high heat.
Add rose water/ Cardamom powder and remove from heat.
In a detachable mould, pour the mix and pat it even from top.
Allow it to cool and room temperature
Top layer :
In a wok , heat Milk.
Meanwhile add the cornflour and cold milk and make a mix.
Add crushed / Grated Paneer to this and mix well for 1 minute on high heat.
Add the cornflour mix and keep stirring until the mix is thickened.
Now , in a sieve , add the mix and filter it.
Pour this mix on the Rava mix in the Mould and pat it even on top.
Allow this is rest at room temperature until it cools and then move to fridge
Remove while serving and serve garnished with chopped dry fruits and sugar syrup.
Special Instructions :
If you don’t have time to sieve, grind the paneer mix in blender and pour on top of Rava base.
Rose water is the ingredient used in the original dish , however you can replace with vanilla essence or Cardamom powder
The Cornflour can be replaced with custard powder as well for variations
