- Wheat flour -2 cups
- Water – ¾ cup approx
- Salt – to taste
- Onion – 1 finely chopped
- Potato – 1 large boiled and mashed
- Green chillies – 1 ( finely chopped)
- Ginger – 1 tbsp( grated)
- Cumin powder – ½ tsp
- Coriander Powder – 1 tsp
- Red Chilli powder – ½ tsp
- Coriander leaves – 1 tbsp ( chopped)
- Home made Garam Masala – ½ tsp
- Salt – taste
How I do it :
Roti Dough :
Mix 2 cups of flour with water and salt. Add water slowly and keep kneading the dough till it becomes soft and loses its elasticity. This will make the Paratha remain softer for longer, alternatively follow the process in Dough Kneader.
To Make Aloo Paratha :
Heat oil in wok.
Add onions and ginger.
Add mashed potatoes, cumin powder, coriander powder, Green chilies, Red chilies, coriander leaves , garam masala and salt.
Mix well in low heat for a minute.
Remove from heat and allow it to cool
Take a medium sweetlime size dough.
Flatten it with hand.
In the center add a tbsp. of potato filling and cover with the dough by pulling from all sides to the top
Now roll the ball of dough again so that the potato filling is covered properly from all sides.
Roll the ball into flat round shape in a manner so that the filling does not come out.Do it gently and evenly.
Now, heat a roti tava or pan.
Add a tsp of oil and grease it all over
Place the flattened dough on Tava and with a flat spatula press it gently all over, so that it gets evenly cooked.
Once the bottom is cooked and has small patches of dark brown , turn it over
Cook the other side similar way while pressing with the spatula.
Remove from heat and serve with Butter and Mango pickle
Special Instructions :
Cook both the sides in low heat on Tava to make it crispier.
Follow the same for other side as well.
Remove from heat .
Serve hot with pickle , green chillies and sliced onion
