Weekends is time for get together and relaxing. Like most of the Indians I too firmly believe that the soul of all happiness rests in stomach. Morning ,the vegetable vendor delivered fresh sweet corns and instead of steaming it with water and turmeric which usually is a easy solution, I decided to make CORN FRITTERS . Once decided ,I could not wait for the evening snacks time. The name might sound continental but the name was frankly not my choice. It a simple corn Pakora. However, today I decided to make it with a combo of my favorite Palak(Spinach) and the “Sweet corns” . Trust me , It’s an instant snack, so I could get it serving before the Ad’s made way for the evening movie.
Ingredients :
Sweet Corn : 1 Cup
Rice Flour : 3 tsp
Besan (Chick pea flour) : 4-5 tsp
Onion : 1 chopped
Asafoetida : a pinch
Palak(Spinach) : 1/2 Cup(chopped)
Coriander leaves : 2tbsp (Chopped)
Curry leaves : 1tbsp(chopped)
Ajwain(carom seeds): 1 tsp
Turmeric (Optional): a pinch for color
Salt : to taste
Procedure :
1.Mix all the ingredients in no proper order.Consistency has to be thick enough to form balls.
2.Heat Oil. Add small picks or balls or like vadas.
3.Turn over and Cook till they are done .
4.Remove from fire and serve with sauce.
