It was one of the days when I developed the craving for vegetables , big and raw. Nothing comes in mind better than the Vegetable Jalfrezi. I had tasted this few years back, when I dropped in to see a friend at a short notice. I was indeed amused me to see her plating this vegetable dish in about 15 minutes ! So, not to say,my hectic days are followed by vegetables jalfrezi , once a while. I also remember her saying that though it looks an instant recipe ,care has to be taken while cooking as the vegetables grow tender on cooking and might lose their structure on the slightest tough movement around.Its therefore an instant food but handle with care kinds.
Potato – 2
Capsicum – 1 1/2
Garlic – 3-4 pods (chopped)
Jeera Powder- 1 1/2 tsp
Dhania Powder- 1tsp
Red Chilli – 1/2 tsp
Turmeric Powder- 1/2 tsp
Salt – to taste
Oil – to use
1. Cut the vegetables in length.
2. Heat oil in pan. Add Jeera to it and allow to splutter. Add chopped garlic.
3. Finally add potato first.fry for 3 minutes(If the potato is new or else coook fo 5-7 min).Once the potatoes are slightly brownish add all masalas( Jeera pwd, dhania pwd, turmeric pwd and Red chilli pwd.)
4.Followed by capsicum and tomato. again stir fry for 2 minutes. add salt and mix well.5. Just make sure while stirring has to happen rather politely if you wish to retain the shape of the vegetables. A slight hint of harshness on the pan cam mash your vegetables .
6. Remove in seving bowl. Serve hot with roti or steamed rice and dal combination
